Mashed Potato & Caramelized Onion Patties


It's been too long since my last (and first) food post! If you missed that I talked about how to make my super fast avocado dip. I love reading food posts on other blogs and even though I'm no "kitchen princess" as we like to say in Belgium, I like food and I'd love to do more food posts myself. So why the food-post-break then? There's even a whole category for it! Well, I thought we would have moved by now but renovations are still not finished. That means no kitchen with my own name on just yet, patience Margot. Not having your own space makes preparing food posts a little harder. Especially since my mom and brother will look at me weird when I want to take pictures of my food at every angle before eating it. But after almost two months of nothing food related here on the blog I just couldn't wait any longer to try some new things, so I sneaked an afternoon of cooking in my mom's kitchen in my calendar and made these incredible mashed potato and caramelized onion patties.


Ingredients for this recipe makes around 10 patties
* 3 large onions
* 8 medium size potatoes
* 3 - 4 teaspoons of olive oil/butter
* 2 teaspoons of sour cream
* egg wash: white of 1 egg with a pinch of salt
* spices: salt, pepper, nutmeg

* large (tefal) frying pan
* medium sized pot
* oven tray lined with parchment paper
* masher
* 2 tablespoons to make the patties
* pastry/kitchen brush

Mashed potatoes
First step is to make mashed potatoes. You can either make it fresh or use potatoes you boiled a few days before. Either way works perfectly.

- Boil potatoes until tender
- Softly mash potatoes, leave little chunks
- Fold in the sour cream until evenly distributed
- Add spices to your liking


Caramelized onions
Second step is to caramelize your onions, preferably while your potatoes are boiling. Lately I've been obsessed with caramelized onions. I just love them so much. The texture, the sweetness, ... I can eat them with almost anything. I remember always hating onions: raw, softly sautéed, caramelized, didn't matter. Everything with onions was a big no no for me. But one day I ordered a burger from a truck outside a party and although I specifically asked "no onions please" there were a bunch of caramelized onions on there. For some reason I deiced to try it with the onions and I'm so glad now that I didn't throw them out. I was in food heaven for five minutes and I could not believe what I'd been missing for so long. Caramelized onions taste so sweet, so different from raw onions (which I still don't like) and they're also very easy to make! The only things you'll need are onions, olive oil/butter and patience!

- Cut the onions in small parts while heating the oil/butter in the large frying pan
- Stir the onions in the oil/butter until evenly coated
- Let it simmer on a medium setting
- Stir occasionally so the onions will soften and brown without burning (this takes about 20-30 minutes)



When you have both the mashed potatoes and the caramelized onions ready it's time for step 3:

Prepare and bake the patties
- Preheat the oven at 200ºC (392ºF)
- Add the caramelized onions to your mashed potatoes
- Softly mix together with a spatula/spoon, try to still leave littles chunks of potato and not make it "sticky" soft
- With 2 tablespoons (or your hands) make patties and place them on the baking tray lined with parchment paper
- Brush egg wash over the top of each patty
- Bake at 200ºC for 30 minutes or until golden brown


Just writing this post and looking at the pictures again makes me crave these sweet, salty and buttery patties. What I wouldn't give to have a few of them right now. Agreed, I already ate them all a few days ago but if I could just describe to you just how delicious they are, I think you'd want to taste them too.
